Oysters were an important food source in all coastal areas where they could be found, and oyster were an important industry where they were plentiful. Like a fine wine, raw oysters have complex flavours that vary greatly among varieties and regions: salty, briny, buttery, metallic, or even fruity. Join us as we learn about all of these tasty bivalves. You will learn how to select, store, shuck, prepare, eat and even cook oysters from both the East and West Coast. You will be given 18 oysters each to perfect your shucking skills and you will discover how oysters pair with spirits, champagne, white wine, craft beer, and cocktails as the afternoon progresses. We will even give you your very own oyster knife to take home so you can impress your friends by showing them what a talented mother shucker you are! Class is held one Sunday per month at 1 PM when in season What To Expect... Your Toronto Food Tours team member will meet you at the Peasant Table Italian Gastro Pup. After a safety brief and oyster shuckin' tutorial, we will get down to some serious shuckin'. As you attempt to shuck your first oyster, don't worry if it's not that pretty as we end up using it in a classic oyster shooter - the perfect way to start any class! Next up, you will learn all about oysters, how they are bred, cultivated, harvested shipped and stored. You will be given a dozen and a half oysters representing both East Coast and West Coast varieties to hone your shuckin' skills. As we are shuckin', of course, we get to eat our homework which we pair with champagne, Ontario wine, craft beer and a Canadian classic cocktail - a Bloody Caesar. We also taste homemade mignonette, cocktail sauce, fried oysters and the classic Oyster Rockefeller. You will get tasting and shuckin' notes, recipes and your own oyster shuckin' knife to take home.
